Why Sweet Chilli Sauce?
Very simply, I wanted something that was neutral with respect to my letters and was easy to remember. A while ago (Oct 2002) I was making labels for a batch of sweet chilli sauce that my wife had made and, well, the name just grew on me. A small survey of folk at work showed they remembered it easily the following day.

Is that all?
Well, I could say that my letters are often a bit sweet and syrupy, occasionally get a bit spicey and sometime even have a bit of bite....

But I wont.

My Sweet Chilli Sauce recipe?
It, too, is very simple. I say "my" recipe but it was given to me by my Mum. She got it from Pamela Doyle. Pamela tells me that she got it from a book entitled 'My Favourite Recipes' by Ellice Handy, published in Singapore in 1952.

1 cup seeded fresh red chillis
8 small garlic cloves
2 inch ginger
2 cups cider vinegar
2.5 cups sugar
1 tsp salt

Zap chilli, ginger & garlic in food processor.
Add vinegar, salt and sugar
Boil until a syrupy consistency & bottle.
